Easy Banana Vanilla Custard
It was one of those nights when I wanted to serve a little something special for dessert but didn’t feel like baking or investing too much time in the endeavor. As is almost always the case in our house, I had overripe bananas in need of a purpose. So I found this recipe online, tweaked it only slightly, and was very pleased with the result. The whole family loved it, especially our 18-month-old who wouldn’t stop giving the ASL sign for “more.” ; )
Whisk 2 tbsp cornstarch, 1/3 cup sugar and 1/4 tsp salt together in a saucepan. Add 2 cups soy milk and one mashed up ripe banana and whisk together until all the lumps disappear. Heat everything over medium-high heat, whisking fairly continuously, until the custard thickens (about 10 minutes).
Remove from heat and whisk in 2 tsp pure vanilla extract and a dash of nutmeg. Pour into ramekins and garnish with whatever your heart desires. I used blueberries and more ground nutmeg. Serve at any temperature but let’s face it, custard is best served warm, don’t you think?
