Key Lime Pie (Virgin) Margarita
This summer has me obsessed with limes. Here’s a fun drink that’s like pie in a glass! It combines the tart of fresh lime with the creaminess of coconut milk, topped with a crunchy “pie crust” of graham crackers. So refreshing, so summer!
You’ll need:
- a can of coconut milk, “water” only. To do this, chill the can in the fridge overnight. Without tipping the can, open it and remove the “cream” that’s at the top. For this drink, use the “water” that’s underneath. You can use the “cream” for coconut whip, recipe found here.
- one lime
- 1/4 cup lime juice, to taste
- sugar to taste
- 2 tbsp crushed graham crackers
Place the coconut water in a food processor. Zest the lime over the processor so the zest shavings fall into the milk. Pulse to combine. Using a handheld lemon/lime juicer, squeeze the juice from that same lime into the mixture as well. Add the additional lime juice and sugar and pulse to combine. You can place this whole thing into the fridge if you plan to serve the drinks later. Once ready to serve, place some crushed ice into the processor and blend again. The mixture will be frothy but will settle once poured into glasses. Garnish with some of the crushed graham crackers. A lime wedge would be nice too!
