Fig & Spearmint Crisps with Balsamic Reduction

The start of summer = the start of fig season = happiness in our household.

We are huge fig fans. The kids eat them up so quickly that I need to make bi-weekly trips to the Farmers Market just to keep up. While they’re a bit expensive (the price gets a little lower throughout the summer), they’re one of those simple delights of nature that we have no problem treating ourselves to.

This is a great little appetizer or snack for several reasons. It’s easy and quick to prepare. Always love that. It looks amazing on the table so guests will be seriously wowed. The flavors are fresh, delicate and oh so complementary to one another. And when people find out the tortilla crisps are homemade, you will be named host/ess of the year. I promise this will be one of your favorite go-to recipes for the summer months ahead!

Here’s what you’ll need (for about 15-20 crisps):

  • two large burrito-size tortilla
  • olive oil
  • 5-6 large figs, sliced (I tend not to use the very end slices. I eat those : ) and only use the bright red-colored slices from the center of the fig)
  • 1 bunch fresh spearmint, coarsely minced
  • balsamic reduction (store-bought or use my recipe here)

Preheat your oven to 375 degrees. Using kitchen shears, cut your tortilla into geometric shapes, about the size of your average tortilla chip. They can be triangles, trapezoids, you get the idea! Place them onto an un-greased baking sheet, making sure they aren’t touching. Next, use a basting brush to coat them with olive oil. No need to coat the undersides, just the tops.

Bake them in the preheated oven for about 2o minutes or until crispy or golden. Watch your oven carefully so they don’t burn.

In the meantime, slice your figs and mince your spearmint. Make your balsamic reduction if applicable.

Once your tortilla crisps have cooled, place them onto a serving platter and top each one with a slice of fig and a pinch of spearmint. Once your platter is assembled, drizzle the balsamic reduction over all of them at once. This gives the platter a beautiful, unified appearance.

Serve immediately and enjoy!
