Pomegranate Orange Coconut Salad with Lime Zest
Pomegranate is such a great holiday fruit. With it’s perfectly sweet & tart flavor, burst of juice in every seed, and jewel-like appearance, it’s like something out of a fantasy world. While the process of de-seeding a pomegranate can be tedious and somewhat messy, it’s well worth the effort. Our whole family enjoys eating the seeds straight up as a snack, tossed over a salad, or mixed into our cranberry sauce. This time I wanted a fresh side dish for a meal of roasted brussel sprouts, roasted zucchini, avocado toasts with balsamic reduction and carrot-coconut soup. This festive combination of pomegranate seeds, orange, coconut flakes and lime zest was the perfect answer. It’s so easy to throw together and makes a big impact on your holiday spread.
Here’s what you’ll need:
- seeds from one pomegranate
- orange slices from one orange, cut into 3 sections each
- 1/3 cup unsweetened coconut flakes
- 1 tbsp lime juice
- 1/2 tsp rice wine vinegar (optional)
- zest from one lime as garnish
Simply toss the main ingredients together in a bowl and then pour into a serving dish. Garnish with the lime zest and serve.
