Here’s a quick and easy snack, lunch or appetizer idea. My Dad used to make us mini pizzas all the time when we were little. He would take hamburger buns or even English muffins, slather them with pasta sauce and cheese and throw them in the toaster oven. It’s simple as can be and such a crowd-pleaser, especially with little ones. Isn’t it funny how sometimes just making thing “mini” makes them an instant hit with kids? Love it!
Just gather together the following items:
- vegan baguette or artisan bread loaf
- Earth Balance buttery spread
- sea salt
- garlic powder
- tomato sauce
- Daiya cheese or other vegan cheese
- fresh basil, torn
Slice the bread and spread a thin layer of Earth Balance on each one. Sprinkle with some sea salt and garlic powder, then place into a toaster oven and toast on medium heat. Spoon some tomato sauce onto each one, then sprinkle with vegan cheese and top with a shred of torn basil.
Plate and serve and watch the crowd go wild.
