Chocolate Avocado Cupcakes

Avocados are creamy, rich, decadent and good for you. So why not put them into a cupcake?!? Chocolate and avocado make for an awesome pair in this stunning recipe. The avocado replaces the eggs and extra oil in traditional cupcake recipes and the chocolate glaze has silken tofu as the main thickening agent rather than powdered sugar! These cupcakes are healthful and as guilt-free as you’ll ever see me get. You’re listening to someone who used to eat an entire jar of Nutella with a spoon so let me tell ya, this recipe is practically saintly in my book!

I remembered seeing a similar recipe in a magazine a long time ago but my version uses a combination of whole wheat flour and almond meal instead of white flour, and it also cuts down the measurements of sweeteners.

  • 1 cup whole wheat flour
  • 1/2 cup almond meal
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 3/4 cup unsweetened cocoa powder
  • 1 ripe avocado, peeled and pitted
  • 3/4 cup pure maple syrup
  • 3/4 cup soy milk
  • 1/3 cup canola oil
  • 2 tsp vanilla

For the glaze:

  • 1/4 block of silken tofu (from a 14-oz container), drained and patted dry
  • 2 tbsp pure maple syrup
  • 1/2 tsp vanilla
  • 1/8 tsp salt
  • 4 oz. vegan chocolate chips, melted

Preheat the oven to 350 and line a muffin tin with paper liners. Whisk together the whole wheat flour, almond meal, baking powder, baking soda, cocoa powder, and salt in a bowl. Set aside.

Purée the avocado in a food processor until smooth, then add in the maple syrup, soy milk, oil and vanilla. Blend it all together well.

Next, add the avocado mixture to the dry ingredients and whisk together until well-blended.

Spoon the batter into the cupcake liners and bake for 25 minutes or until a toothpick comes out clean. Allow the cupcakes to cool.

To make the glaze, simply blend the tofu, maple syrup, vanilla and salt together in a food processor. Add the melted chocolate and blend again until smooth. Using a spoon, gently ladle some of the glaze onto each cupcake, gently spreading it around for an even appearance.
