Avocado-Lime Toasts with Roasted Corn
Talk about going green! This plate of deliciousness made me feel so happy and healthy. I’m a sucker for avocados and bread so this combination is a winner in my book. Roasted corn is high on my list as well! The texture of the creamy avocado was the perfect complement to the crunchy corn and crusty bread, and the cayenne pepper, lime zest and cilantro leaves gave it that extra kick. I served these up on Labor Day as an appetizer and they were enjoyed by all.
All you need is:
- half a baguette, sliced
- one avocado, peeled and pitted
- one small lime
- one ear of fresh corn, shucked with the kernels sliced off
- cayenne pepper
Heat your oven to broil on high. Place the corn kernels on a baking sheet and roast until they brown and sizzle.
In the meantime, toast the baguette slices until crispy and firm, then set aside. Place the avocado into a food processor and blend until fairly smooth. Grate the lime and place the zest aside. Squeeze the lemon juice into the food processor with the avocado (make sure the seeds don’t get in), throw in a pinch of the zest, and blend again. Spread the avocado mixture onto each bread slice.
Spoon the roasted corn evenly over the toasts, then sprinkle with the remaining lime zest. Add a dash of cayenne pepper to each toast then top with a cilantro leaf.
