Roasted Cauliflower and Figs

Cauliflower is a new family favorite of ours. My husband and I have always loved it but the kids are just starting to take a real interest. Roasted in olive oil with garlic, salt and pepper and the caramelized sweetness of fresh fig, this cauliflower dish is truly out of this world. I love when the florets are melt-in-your-mouth tender, but crispy and crunchy on the tips. Heavenly!

Gather together the following:

  • one head of cauliflower, washed, trimmed and cut into florets
  • 5-6 figs, washed and sliced
  • 2 cloves garlic, minced
  • olive oil
  • sea salt and freshly ground pepper to taste

Set your oven to the highest broiling setting. On a baking sheet, toss the cauliflower, garlic and figs in about a tbsp of oil. Lightly season with salt and pepper.

Cook until the cauliflower is brown and crispy on the edges but is tender enough to be punctured easily with a fork. Be sure to turn and flip the cauliflower occasionally during the roasting process for an even cook.

Season with more salt and pepper to taste, then serve.
