This deliciously refreshing parfait is perfect for breakfast, an afternoon snack, or even a healthy dessert! It’s so simple to make but looks gorgeous in a vintage wine glass. I made this for my four-year-old daughter as a snack on a warm afternoon and she savored it, bite by bite, smiling like she was being given the royal treatment.
Here’s what you’ll need:
- one ripe kiwi, skin removed and diced
- one 6-oz container of soy vanilla yogurt
- 1/4 cup vegan graham cracker crumbs (I pulsed mine in a food processor)
- a sprinkling of sunflower seeds
Simply layer the ingredients in this order: kiwi, yogurt, graham crackers, kiwi, yogurt, a sprinkling of graham crackers and then the sunflower seeds. Save a couple chunks of kiwi as garnish for the top if you’d like.
