Seitan Salad Sandwich with Green Grapes
My Dad used to make me chicken salad sandwiches all the time when I was a kid. One of my missions with this blog is to recreate all my favorite childhood foods to be animal-friendly as well as healthier for the people eating them! Well folks, it was chicken salad’s turn.
Some people just aren’t down with chicken salad. It reminds them of hospital cafeterias or boring church potluck meetings. They think of day-old chicken drowning in mayonnaise, stuffed into a dry croissant and wrapped tightly in saran wrap. I get it. That’s totally icky.
But this recipe seeks to bring the classic chicken salad sandwich to an entirely new level with the use of seitan instead of chicken, cholesterol-free Vegenaise instead of traditional mayo, slices of crunchy celery and the most fun ingredient of all… crispy sweet green grapes!
Here’s what you’ll need:
- 1/2 cup Vegenaise
- 1 tbsp lemon juice
- 1/4 tsp freshly ground black pepper
- one box seitan, drained, rinsed and chopped
- 1 stalk celery, sliced
- 1/3 cup sliced green grapes
In a large bowl, mix together the Vegenaise, lemon juice and pepper. Toss with the seitan, celery and green grapes until well-combined. Serve on your favorite bread and there you have it! Lunch couldn’t be any easier.
