Tomato-Basil-Peach Mini Skewers

I’ve been seeing the marriage of tomatoes and peaches everywhere these days. I’m not surprised. These two fruits combine to delight your mouth with bursts of sweet tanginess and the crisp basil tempers them just right. This is a fresh, easy and quick appetizer to throw together. It looks beautiful on a platter, served with some balsamic for dipping. I used tomatoes and basil from our own garden and a lovely, ripe peach found at the farmers market.

All you need is:

  • small tomatoes (grape, cherry, sweet 100s, etc.)
  • basil leaves
  • ripe peach, cubed
  • balsamic vinegar for dipping

Simply slide them onto skewers and plate them for a wonderful, simple presentation. They’ll be gobbled up in no time!
