Gooey Chocolate Peanut Butter Cookies

I needed chocolate and I needed it badly. Since we were out of chocolate chips, I looked for recipes that used cocoa powder and went from there. These cookies were baked while on vacation at the shore. They made the whole house smell divine and they were gobbled up by kids, nephews, nieces and adults before I could go back for seconds. : ) Nothing makes a baker happier.

Here’s what you’ll need:

  • 3/4 cup packed brown sugar
  • 1/2 cup sugar
  • 1/2 cup cocoa powder
  • 1/2 cup Earth Balance
  • 1/2 cup peanut butter
  • 1 ripe banana, mashed
  • 1-1/2 tsp vanilla
  • 1 tsp cinnamon
  • 2/3 cup unbleached, all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder

Preheat to 350. Combine the sugars, cocoa powder, Earth Balance, peanut butter, banana, vanilla and cinnamon and mix together well, making sure to smooth out all the bumps. I used an electric mixer. Add the flour, baking soda and baking powder and blend with the mixer until fluffy. Lightly flour your hands and roll the cookie dough into 1-1/2 inch balls. The dough will be soft and sticky so the flour will help keep it from sticking to your fingers. Place the rolled balls onto lightly greased cookie sheets. Bake for 8 minutes and then allow to cool. The cookies will flatten during baking.

Dust with some powdered sugar and serve.
