Citrus Bruschetta

Okay, here’s a blog you could get lost in. Lost in a deep, delicious world of vegan delicacies. Check out Happy Healthy Life and this amazing post for Citrus Peach Bruschetta that I just had to go and make after seeing.

I had two ripe peaches and company coming over so this recipe was just perfect. I paired it with my Avocado Toasts with Balsamic Reduction and oh what a happy pairing it was!

Here’s what you’ll need:

  • 1 cup peaches, diced
  • 1 cup navel orange, diced
  • 1 tbsp lime juice
  • a pinch of lime zest
  • 1 tsp olive oil
  • chili lime salt to taste
  • French or Italian bread, sliced
  • Earth Balance buttery spread
  • garlic powder
  • sea salt
  • balsamic reduction for drizzling

First, butter the slices of bread with the Earth Balance and sprinkle with some garlic powder and sea salt. Then toast them in a toaster oven until golden brown.

In a bowl, toss the peaches, orange, lime juice, lime zest and olive oil. Spoon the mixture onto the toasts and then sprinkle with chili lime salt. Finally, drizzle with the balsamic reduction.
