Strawberry-Vanilla-Chia Ice Cream
Our ice cream machine has done it again!
This is a simple recipe that you can customize however you’d like, depending on mix-ins you have laying around your kitchen. Today, I thought the addition of chia seeds would be a fun, healthy twist and they’re even reminiscent of the ground vanilla beans you see in French Vanilla ice cream for instance. My kids loved this flavor!
For this ice cream you’ll need:
- 2 cups non-dairy milk (rice, soy, almond, coconut)
- 1/4 cup agave syrup
- a pinch of salt
- 1/2 cup chopped strawberries
- 1 tsp chia seeds
In a bowl, combine the milk, agave and salt and then pour into the ice cream machine, per the instructions for your specific machine. Mine takes about 20 minutes to solidify, at which point you can add the strawberries and chia. Churn a bit longer to incorporate the mix-ins and then serve immediately.
