I found sunflower greens at the market and was intrigued to say the least. The woman working there said they’re exactly what they say they are… the sprouts that grow from sunflower seeds that have been in the soil for about a week. She described them as nutty with a palatable texture. I’d say she was spot on.
I came home determined to dress them up only modestly… to give them a little extra boost without drowning out their natural flavor. I ended up tossing them with toasted sesame oil, a splash of mirin, some sesame seeds, salt and pepper. They were delicious!
