Coconut and Toasted Almond Jasmine Rice

This rice pairs nicely with my Tofu Skewers and is an easy way to jazz up jasmine rice. Cute, right? ; )

Make jasmine rice in rice cooker using half water and half coconut milk. In a separate pan, toast sliced almonds with sugar over dry heat until caramelized. Once rice is cooked, toss with a little canola oil and lemon juice then fold in almonds.
