Almond Chocolate Chip Cookies

These are the best cookies I’ve ever made. As so often happens in my life, I had a tube of almond paste that had been calling my name. Loudly. These cookies are chewy goodness with a hint of almond flavor and tons of melty chocolate chips. Serve with a glass of cold almond milk and it’s a heavenly vegan treat!

Preheat to 350. With an electric mixer, beat 2 sticks softened Earth Balance vegan buttery sticks, 3/4 cup granulated sugar and 3/4 cup brown sugar until well combined, light and fluffy. Add in 3 oz almond paste, broken into smaller pieces and blend til well combined. Add in equivalent of 2 eggs with EnerG vegan egg replacer and 1 tbsp vanilla until well combined.

In another bowl combine 2.5 cups all purpose flour, 1 tsp baking soda, 1/2 tsp salt. Add to wet mixture along with 12 oz of vegan chocolate chips. Mix until just combined.

Scoop onto baking sheets lined with parchment and bake for 10-12 minutes or until lightly golden.

One word of precaution… eat one and you’ll feel great. Eat two and you’ll be just a hair over satisfied. Eat three and you won’t be able to lift yourself off the couch. These cookies are dense and decadent. Enjoy in moderation.
