Avocado Toasts with Balsamic Reduction
Picco Restaurant in Mill Valley, CA serves an amazing avocado bruschetta that served as the inspiration for this dish. Like true Californians, our family is obsessed with avocados and nothing goes better with a creamy avocado than a syrupy sweet balsamic reduction sauce. Yum! This dish is a bit sweet, a bit salty, a bit creamy and a bit crispy. All the best culinary sensations rolled into one! It’s also a great dish for entertaining. It presents well but takes hardly any effort to put together.
First bake then slice bread (I like the par-baked vegan loaves from Trader Joe’s) and spread Earth Balance buttery spread on top, sprinkling with garlic powder and a touch of sea salt. Toast the slices in a toaster oven. Then spread thin layers of avocado on top and sprinkle sea salt, black pepper, chili flakes.
To make the balsamic reduction: pour 1/2 to 3/4 cup of balsamic vinegar into saucepan and heat to boiling. Reduce to med-low and simmer for 20 minutes or until thick and syrupy, stirring almost constantly. Then stir in a tbsp or so of maple syrup and mix well.
To plate, arrange the toasts on a plate and drizzle with some olive oil and balsamic reduction. Simply delicious.
